Banana Chocolate Chip Superfood Muffins

AN EASY PLANT BASED - HIGH PROTEIN - FIBER FILLED - DIGESTION FRIENDLY RECIPE


I love making these as a mini meal prep for the week! They're a great breakfast or snack that will keep you fueled and satisfied. How?! Because they are filled with SUPERFOODS! A few superfoods include...


  • Spelt flour: it is an ancient grain that compared to traditional wheat, has more protein and fiber!

  • Yogurt: an amazing probiotic that is great for the gut!

  • Bananas: full of magnesium and B6...and many other vitamins!

  • Chocolate...DUH! Great for the soul.


These superfood muffins are a crowd pleaser for sure! They are made with superfoods like bananas, spelt flour, yogurt, eggs and more!


These are made in one bowl, so they are an easy baking recipe for you and your family. They are also gluten free friendly and plant based friendly.


Banana Chocolate Chip Superfood Muffins


Ingredients

(makes 12, prep/cook time is about 20 minutes)

See NOTES for the brands I suggest!

  • 2 ripe medium bananas

  • 2 eggs or flax eggs

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 cup sugar of choice, I love using coconut sugar or date sugar

  • 1 cup yogurt, I prefer plain non fat Greek, but you can use whatever you like here! Plant based friendly options work too.

  • 2 cups of spelt flour - wheat flour works here! Or check out this list of swaps.

  • Chocolate Chips (whatever amount your heart desires)

Directions

1. Preheat oven to 400 degrees F

2. Line or grease a muffin pan

3. To prep, you just add all of the ingredients (other than the chocolate chips) to a bowl and mix. To do this, you can blend all of the ingredients together in a blender, use a hand mixer or really mash the banana up and mix it by hand.

4. Once mixed, fold in the chocolate chips.

5. Pour the batter into the muffin pan

6. Bake for about 15-18 mins or until a toothpick runs through clean


NOTES:

My biggest worry with recipes is that people will get discouraged when they do not have the right ingredients and they'll give up. I am sharing links to where you can buy what you need, but as always I will include swaps you can make!
