CREAMY CAESAR PASTA SALAD - Vegan, Gluten Free and Macro Friendly

A refreshing and delicious warm-weather meal! Perfect for meal prep, to being as a dish to an event or for a healthy family lunch/dinner.


Need something easy, quick AND crowd pleasing? Introducing CEASAR PASTA SALAD!


This one is TOO good not to make for your family or friends. You simply cook up some pasta and toss it with your favorite Caesar creamy dressing (read below for my Greek yogurt dressing recipe), parmesan cheese and shredded romaine. Add in some grilled chicken or maybe roasted chickpeas for a vegan/vegetarian/plant-based version? I love doing both on the side so that it is more diet/preference friendly! To make it even easier you can grab grilled chicken from a local prepared foods market/grocery store. Simply top it with croutons, I like to use fresh sourdough and made my own garlic croutons, but anything works here.

Creamy Caesar Pasta Salad

Ingredients


Everything below is a guesstimate because it's truly a throw together meal, you really do not need to measure anything and it can be based on preference and diet. Notes on my favorite items/brands are below the directions.

  • 3 heads of romaine, finely chopped

  • 4 grilled chicken breasts (OR) 2 cups of roasted chickpeas

  • 1/2 cup of shredded parmesan cheese

  • 1 box of pasta, cooked

  • 2 cups of croutons

  • Dressing details: I mix plain non fat Greek yogurt with salt, garlic powder, onion powder and a touch of cracked black pepper. Typically to my liking of seasoning. For this recipe I would use at least 2 cups of greek yogurt for this and season as you please. Or use your favorite Caesar dressing and use 1-2 cups depending on preference.


Directions


To be very straight forward, this is WAY more about prep than actual directions. This is a total throw together meal! Just mix the lettuce, pasta and chicken/chickpeas in the pre-made dressing. Top with cheese and croutons.



NOTES:

  • I prefer to use this pasta because it is grain free! The link directs you to where you can buy it on Amazon, I am always sharing foodie recommendations in my Amazon Storefront.

  • If serving this for a cookout or event, I would prepare it within the hour before leaving so that the pasta does not get soggy.

  • Using my Greek yogurt dressing will make this higher in protein than other dressings, making this awesome if you're trying to up that protein! I have also used dairy free Greek-style yogurt and had the same dressing results.

  • People love it with chicken and/or chickpeas, but feel free to add your preferred protein source or leave it out! I have enjoyed it without a "protein" and it was delicious.
