Lemon Cheesecake Overnight Oats

A light, yet deliciously filling and fueling way to start your day...or even end it, is easy and waiting for you in the fridge with the lemon overnight oats!


Busy, busy, busy! We ALL are! Make life easier by meal-prepping some overnight oats for yourself or your family. They last for a few days in the fridge and actually taste better and better as the days go on...it's that creamy yogurt soaking into the oats...delish!

Ingredients:

  • 1/2 cup old fashion rolled oats or quick oats. I use a gluten-free version that you can buy here

  • 1 TBS chia seeds. These are a great source of healthy fats!

  • 1/3 cup milk of choice or water...I think water works fine since you are using creamy yogurt here!

  • 1/2 tsp lemon extract. Please adjust as needed here. If you want extra lemon, add a bit more. I think it is always safe to start small, as you can add flavor if needed.

  • 1/3 cup yogurt of choice. I love using lemon-flavored yogurt, but any flavor will work. Berry flavors or vanilla can be great too!

  • Toppings: blueberries, raspberries, almonds, graham crackers, honey...anything! I love blueberries

Directions:

  • Gently mix the oats, chia seeds, water, lemon extract/juice, and yogurt together

  • You can add toppings now or save the toppings for when you plan to eat!
