PALEO Pecan Pie Bars

Pecan pie bars - aka my new healthyish, paleo-friendly, favorite dessert to make.



Whipped these up for Thanksgiving and I couldn’t be more excited to make these for every holiday! If you’re looking for a dessert to make, this was super easy!


I researched a few recipes and ended up doing my own thing. Recently I have been trying to figure out the science behind almond flour and how to sub it for anything, I think these turned out SO yummy with an almond flour crust.

Ingredients: Makes about 12 bars


Crust:

  • 2 cups almond flour

  • 1/3 cup melted butter

  • 2 tbs and 1 tsp maple syrup or syrup of choice

Topping:

  • 1/3 cup maple syrup/syrup of choice

  • 1/4 cup and 1 tsp coconut oil or you can use butter

  • 1 tbs vanilla extract

  • 1 1/2 cup chopped pecans

  • 1 flax egg or real egg - 1 flax egg = 3 tbs warm water & 1 the flax


How to:

  • preheat oven to 350 degrees F

  • line or grease an 8x8 pan

  • mix all crust ingredients together, then press crust into pan

  • bake for 10 minutes, remove & set aside. Keep oven on

  • while crust bakes, mix maple syrup, coconut oil & vanilla extract together. In a small pan, bring the mixture to a boil & then immediately bring to a simmer for 4 minutes. Let the mixture settle in the fridge for 15 minutes.

  • chop pecans and toast them at 350 degrees F for 5 minutes (optional)

  • prepare flax egg & let sit for 3 minutes to settle

  • remove the mixture from the fridge, stir in flax egg. Then, stir in pecans

  • bake for 25 minutes at 350 degrees F

  • let sit in the fridge for at least 1.5 hours before cutting and serving
